Recipe Oxtail Stew
1 kg of oxtail
1 bottle of red wine
2 green peppers
3 cloves of garlic
Guindilla (Chili), (this is optional)
HOW TO PREPARE THE RECIPE OXTAIL STEW
First of all, you have to chop all of the vegetable in medium sized pieces and save them. Coat the pieces of ox tail in the flour, and place them in a large pan over medium heat with 2-3 tablespoons of oil to sear the pieces on each side. Remove the ox tail and add the veggies, lowering the head and sauté them until tender. Add the ox tail back into the pain and cover with red wine. The ox tail should be covered but not excessively so. Lower the heat until the meat falls of the bones, this should take around 3-4 hours, and that´s it! The stew tastes even better if it is then placed in the fridge and eaten the next day.
